What are some benefits of coconut oil? And how is it to be used?

Coconut oil can be used in salads, and other foods. It can also be used on the skin and hair. It may also help your pie crusts taste and stay together better. Some say that its makeup helps keep you healthy, but those claims are quite difficult to assess.

It is often mentioned to help with various maladies such as diabetes and thyroid deficiency. It does not have any special properties with these problems. It will not increase your metabolism, though it could help you get fat if you eat too much of it.

There have been several medical studies of coconut oil, but these have mostly shown that there is no great benefit. Even the ones paid for by the coconut oil marketers didn't show benefit or were severely compromised.

Incidentally, this stuff should run for about $3 per gallon, and not more than $5/gallon. Many marketers will put it into smaller bottles and sell it for a lot more than that. They will also talk about "extra vigin" or whatever to try to increase the value. Coconut oil does degrade over time (it gets rancid if it is exposed to air for a while), so they will also explain that you must get only the freshest of it.

Coconut oil is very good for you... IF you get the right kind! You MUST get the VIRGIN coconut oil as that oil has not been through the processing that other coconut oil has gone though. The other kind is LOADED with saturated fats, where as the virgin kind has next to none. Coconut oil has medium chain fatty acids, which is very beneficial for you.

"Coconut oil is comprised of medium-chain fatty acids (MCFAs), also called medium-chain triglycerides or MCTs.

Coconut oil is nature's richest source of these healthy MCFAs.

By contrast, most common vegetable or seed oils are comprised of long chain fatty acids (LCFAs), also known as long-chain triglycerides or LCTs.

There are several reasons to explain why long-chain fatty acids are not as healthy for you as the MCFAs in coconut oil:

I have ADHD but I'm scared to get on a prescription of Adderall because of the side effects such as weight loss, drastic changes in libido, headaches etc. etc. As well as the obvious dependency on the drug. But I'm really deserpate for concentration... I don't use ANY heat or any dyes in my hair, nothing at all, except combing, shampoo, conditioner. But my hair still doesn't look as thick and healthy as other girls'. Should I use coconut oil in my hair? Would it even do anything? Can it make my hair better?

Coconut oil is GREAT for hair! I love using coconut oil on my hair. It is inexpensive compared to a lot of hair products and it is natural, which is a plus.
Just scoop out a little bit. Maybe like 1/2 tablespoon-1 tablespoon(depending on hair length) and heat it up in a microwaveable bowl. Then after it is liquid, just apply it to the middle and tips of your hair (keep away from scalp to prevent getting too oily). Let the mixture sit for 20-30 minutes then make sure to shampoo out the excess oil. Shampoo well, then use a little bit of conditioner to keep the softness going. Then let your hair air dry and you will have gorgeous hair!

*I wouldn't suggest using a lot if you have fine hair*

Why does coconut oil make me nauseous?

Q. I started taking coconut oil a couple of weeks ago for it's health benefits, primarily weight loss. Each time I take it I feel so nauseous. I've heard that the body needs to get used to it, but how long does it take? Any scientific explanation and solution will be appreciated.

Coconut is mainly saturated fatty acid. It solidifies at lower temperature.
Compare it to an olive oil which is mainly unsaturated fatty acids that doesnt solidify at colder temperature.

Even massaging the gums with a mixture of 70% unrefined edible oil (seasame or groundnut or coconut), 15% glycerine tanic acid and 15% fine powder of rock salt or table salt is useful for good, healthy teeth and gums. Make it a daily habit. Please not that healthy gums are more useful than sparkling white teeth.

4. Mouth Freshener : Gargling with a lemon juice mixed with lukewarm water, freshens the mouth. Take a quarter of a lemon, massage it on teeth and gums and then gargle with water. Even chewing of mango, tulsi or betel leaves after meals is good, and so it is advised in India.

5. Exercises for teeth : Keep the lips closed. Pound the upper teeth on lower teeth for 30 to 40 times twice a day. Then massage the saliva on gums with the tongue. That will ensure proper blood circulation in teeth and increase the life of healthy teeth and gums.

so i bought some coconut oil lastnight and i thought it would smell good...but it did not. its just oil. i looked at the back and it says in wont smell or taste like coconut so its good to use in place of other oils and butters and stuff.
well are all coconut oils like this? and even if it doesnt smell like coconut is it still okay to eat a spoonful a day or would that be bad for me?
well a bunch of people online say they use it for everything. lotion, makeup remover, toothpaste, ect. and they all talk about how good it smells. thats why i assumed it had a smell.

and i also have found in a few different places it says eating a spoonful can give you an energy boost and suppress hunger.

Just eating a spoonful of coconut oil everyday is not very appetizing try mixing equal parts honey and coconut oil and using it on your toast or english muffin its really yummy that way

Tiny pimple BUMPS on face?

Q. Okay, so I've had these bumps for about 2-3 months. (I think) They're like small little hills on my face, they look like pimples, but they don't have a head. But, the part that gets to me is that some of the bumps are only visible when I stretch my skin. Ex: Whenever I raise my eyebrows, a bunch of little bumps (right above my nose, between the eyebrows) appear. This also occurs whenever I press my lips together, and little bumps show on the skin between my lip and my nose.

How do I get rid of these horrible bumps?

Whatever it is (it is probably millia as said by someone else here), it can easily be treated through good diet and proper lifestyle.

Live in a clean environment, eat more beef, eggs, vegetables, coconut oil, nuts, some quinoa, ... Just try to cut back on sugar. If you like you can get some supplements to strengthen your immune system (zinc, vitamin C), that's always handy.

Oh, and cook with olive oil or coconut oil.

Personally, I use Organic Rosehip Oil on my face every night. I order mine from www.rosabay.com. Rosehip oil benefits brown spots, premature aging, dry skin, burns, scars, etc. You can go to this website and read about the qualities of it or do a search on "benefits of rosehip oil". They also have a great line of body lotions, etc. Or, you can add the rosehip oil to your own favorite lotion. It is quite inexpensive and this oil from Rosabay seems to be superior to any other that I have found in the U.S. (Theirs comes from New Zeland.) I am 48 years old and people guess my age at 38-40. That is quite a compliment. Just to note, I have used this on my face for about a year now.

How will the coconut oil help for men?

Hi I am a male 23, having constantly cystic acne on my jaw, i suspect they are related to hormone imbalance, so my friend suggested me to take coconut oil to balance my hormone and also kill bad stuff in my body too. I am just wondering will that really work and how does the coconut oil help for male?

Try Lickety Split Cocoa Cake
1 1/2 cups unsifted all-purpose flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp. water
6 tbsp. vegetable oil
1 tbsp. vinegar
1 tsp. vanilla

Combine flour, sugar, coca, baking soda, and salt in mixing bowl, stirring with whisk or spoon.
Add water, oil. vinegar, (yes, vinegar) an vanilla; stir together until batter is smooth and ingredients are well blended. Pour into greased and floured 9 inch layer pay or 8x8x2 inch square pan. Bake at 350 degrees F for 35 to 40 minutes, or until cake tester inserted in center comes out clean. Cool. Frost with frosting or icing of your choice--gainsh with whipped cream, coconut, nuts, or fruit.

I hit a plato in my diet and need advice to get past it please (please read details)?

I started Jan 1 2009 at 300lbs and im now at 215lb and i am 22 years old and 6.0' tall i did p90x for the first 9 months and lost the first 70lbs now i go to the gym 4-5 times a week and lost another 15lbs but now i have been at 215lb for the last 2 months and cant lose any more weight to save my life i have this tire around my gut i cant get rid of and i do 40 mins of cardio with my heart rate at 170 for 30min and then lift weights after and do abs most days and my diet is chicken breast no seasonings, yam for the first meal at noon and green beans for later on, oatmeal no salt or butter and sugar and egg whites for breakfast and apples and almonds for snacks in between i eat that 5-6 times thru out the day so right now im staying away from sodium and have a cheat meal like saturday night and do protein shakes before and after every work out
so that's most of it does anyone have suggestions for me to get rid of this tire that's what i want most is just to have a flat stomach thanks guys in advance

You've got a classic case of 'over dieting'. The stress you've put on your body with high stress workouts (p90x is a great program, but I swear the guy who makes them has a screw loose ;P) plus the extreme low fat regime you've described has put your body into "famine mode". Simply put, your body thinks you've suddenly become the lead of 'survivor man' and it's trying to help you out by holding on to as much weight as possible.

The good news is your solution is actually to cool your jets and take your diet a little easier. Your body will be able to handle the stressful workouts better with more good fats in your diet. Yeah you read that right, FAT. Eat the right kinds in the right ways and it's GOOD FOR YOU. When I say the right kinds I don't mean man made oils like corn or canola, that stuff is bad to say the least, but I digress. Monounsaturated oils like olive, are healthier and more natural, but they won't help you lose weight; in fact they are best for healthy weight gain (almonds fall into this category so be careful how much you eat). Coconut oil on the other hand is great for weight loss because it actually naturally speeds up your metabolism (you may even notice your body temperature goes up when you eat it).

Also there is no reason to eat eggs without the yolk. Eggs contain good fats like DHA that are important for your brain and your heart. Source, however, is important; get free range eggs, they have more good fat and vitamins and less bad fat.

Oats should be soaked overnight to deactivate the anti-nutrients they contain (natural chemicals which bind minerals like zinc). Put a little coconut oil and cinnamon on top to slow the absorption of carbs and lower blood sugar. (tastes great too!)

A word on protein shakes:
There is nothing like I tasty shake after a workout, but avoid protein powders made from soy which contain natural chemicals which suppress the thyroid and increase estrogen levels (aka. makes you tired and fat).
Also protein powders made from dried dairy, like whey powder, are exposed to high levels of heat turning them into carcinogens. Yikes!

I blend raw yogurt, raw milk, frozen berries, a tablespoon of coconut oil, and a raw egg yolk to make a ultra nutrient dense weight loss snack.

On seasonings: switch to an unrefined salt like glacial salt or Celtic sea salt. You'll recognize them in health food stores by their funny color (pink, grey, or brown specks). They balance blood pressure without salt restriction because they contain all the natural minerals your body needs to use sodium properly. Great, right? Also, pepper, garlic, sage, parsley, none of these will hurt your diet, so diet with flavor!

One last note: throw away your scale, weight has more factors than fat! (bone density, muscle, dehydration) If you want to track your progress use a pair of jeans, a mirror, or a trusted friend.
And don't forget to be proud of the amazing progress you've already made! You've obviously got the determination to make your goal. Good luck, and be healthy!

I can't find any info online about the list of consumable essential oils..I know oil of oregano can be taken internally or externally...but what other oils are out there I can take with food and what is it good for?

I think you're misunderstanding what an "Essential Oil" is, which may explain why you aren't able to find a list. An Essential Oil is a highly concentrated and extracted oil (often steam distilled so it's more concentrated and pure) from certain plants... pure essential oils should not be consumed without a carrier oil to dilute them and only certain ones are even safe that way.
Oregano Oil isn't an "Essential Oil" but is more of a supplemental or culinary oil that is used medicinally... there is quite a big difference between them. Essential Oils are more commonly used for the smell of them such as Tea Tree Oil, Lavender Oil, Frankincense Oil, etc. A few that come to mind that could be swallowed if they are properly diluted would be Lemon Oil, Sage Oil, and others where you may see the herb in a recipe. If these are the oils you are looking for, I would recommend looking at a book on Essential Oils so you can not only find out which ones can be swallowed (and how much to dilute them), but what each one does and cautions on each one so you don't inadvertently swallow one that isn't safe for a medical condition or prescription you might be taking.
I would highly recommend against swallowing any Essential Oil without reading up more on it beforehand... they can be very damaging if they aren't used properly, but can have great benefits when they are used properly. Good luck and I hope I helped!

Coconut Oil: Good or Bad?

Hey everyone!

I was listening to the CDs from Dr. Andrew Weil this weekend and I was confused about something he mentioned about Coconut Oil. He said people should avoid eating anything prepared with CO because it is high in saturated fats and will pose health risks.

This confuses me greatly beacuse I have been told by many sources that CO is an EXCELLENT source of Omega 3 and essential fatty acids. I have been told to eat a tablespoon up to 5 times daily and use it externally as well as cook extensively with it. I have only been using the extra virgin, non refined CO because I like the coconutty taste and smell. Plus the EVCO has more health benefits. I use a lot of EVOO (extra virgin olive oil) on a regular basis because of the healthy aspects of it as well.

What is confusing me is that saturated fats should be avoided, yes, but I understand that EVCO is a medium-chain saturated fat and that it is digested differently in the body than the other type of saturated fats like in animal products. We eat normal amounts of meat and greater amounts of whole grains and vegetables. I thought that because CO was vegetable and not animal, then it would be a better source of EFAs.

Dr. Weil also states that Canola Oil is better for you for cooking with. I have heard the complete opposite! Of course Olive Oil is preferred over most others, but I am wondering if Dr. Weil is confusing Canola Oil and Coconut Oil?

Can anyone shed some light on this subject? I don't want to give up my EVCO if I can help it. I have 160 different ways to use CO and they all seem beneficial so far.

I don't know who Dr. Weil is, but if you have represented his claims accurately, he has no idea what he is talking about. Canola oil, which is produced from genetically modified rapeseed, is one of the worst of the "edible" oils that you can put in your body, especially when used in any kind of cooking other than baking. It converts readily to toxic substances when subjected to the heat used for sauteeing and frying.

There is a growing body of evidence that refutes the theory that natural saturated fats are any less healthy than unsaturated fats, when consumed in moderation. There is also now a damning body of evidence that reveals artificial, hydrogenated fats like margarine and shortening to be extremely unhealthy.

There is nothing wrong with eating coconut oil, either raw or cooked. In fact, it is one of the more beneficial fats you can consume, including when used for frying. Other healthy fats include olive oils, grapeseed oil and, for high-temperature frying, peanut oil and pure, non-hydrogenated lard (hard to find in regular grocery stores).

If you want to avoid the health problems that have been associated with saturated fats in the junk science community and popular lore for the last 50 years, you need to do two things:

1) Eat a diet based on whole foods, avoiding sugars and other simple carbohydrates, and keep your calorie intake low enough to avoid gaining excessive body fat.

2) Get a minimum of 45 minutes of cardio endurance exercise 4 days a week. Muscle strength training is also beneficial, but cardio training is more important for general health and fitness.

If you do these things, you don't need to worry about how much saturated fat or cholesterol you consume. Eat as much shrimp sauteed in butter with avocado sauce as you like. Get rid of your canola and soy oils and stick with healthy fats, whether saturated or unsaturated, vegetable or animal.

While there is no cure for keratosis pilaris, there are palliative treatments available. The efficacy of these treatment methods is directly related to the individual's commitment and consistency of use.

Creams containing the acid form of vitamin A, Tretinoin, have been shown to help. Most commonly sold under the trade name Retin-A, it is a topical retinoid medically approved in the treatment of acne. This medicine works by increasing the cell turnover rate of the outer layer of the skin, decreasing the amount of the keratin in the skin. As a result, the surface layer of the skin becomes thinner and pores are less likely to become blocked, reducing the occurrence of symptoms related to acne. While keratosis pilaris is not acne, some believe this action may be of benefit to those with KP as well.

Another retinoid that has the potential to help with keratosis pilaris is Adapalene.[7] Benefits include increased stability when applied in conjunction with other topical medications, such as benzoyl peroxide. Adapalene is a moderator of cellular differentiation, keratinization, and inflammatory processes, having both exfoliating and anti-inflammatory effects.

An alternative is the prescription medication Triamcinolone. Most commonly sold under the trade name Aristocort, Triamcinolone is a synthetic corticosteroid, compounded as a cream, which has been medically approved as an anti-inflammatory agent in the treatment of eczema. As the action responsible for alleviating eczema symptoms is, as with retinoid creams, the reduction amount of keratin in pores, the effect of Triamcinolone on KP is expected to be similar.

As with Triamcinolone, Tretinoin or any other treatment, once therapy is discontinued, the condition reverts to its original state. However, skin treated with Tretinoin may take several weeks or more to revert to its pre-treatment condition, but may, at the same time, take several weeks or more to show optimal results, with the condition commonly worsening initially, as underlying keratin is brought to the surface of the skin. Tretinoin is considerably more expensive and dispensed in smaller quantities than Triamcinolone and other treatments. Although it may be the most effective treatment for keratosis pilaris, it is not considered the first line of treatment.[citation needed]

The condition is often dismissed outright by practitioners as being presently untreatable,[citation needed] giving mere moisturizing suggestions or reassurance that the condition will improve or cease with age, typically after 30. Ignorance, accompanied with the price, availability, quantity dispensed, time taken for optimal results to be achieved, more serious side-effects, adverse reactions, and worsening of the condition in the initial treatment phase - coupled with the cheaper, safer, and easier availability of other treatments - has hindered Tretinoin from showing its potential in the treatment of this condition.

Sulfur has been used for skin treatment predating modern medicine. Sulfur soaps, lotions, and exfoliants have been used successfully for treating KP. Methylsulfonylmethane (MSM) supplements used with some success often require dosage as high as 25g per day. Side effects can include thickening of hair and nails, and pale skin.

Exfoliation, intensive moisturizing cremes, lac-hydrin, creams, and lotions containing alpha hydroxy acids and urea may be used to temporarily improve the appearance and texture of affected skin.

Beta hydroxy acids may help improve the appearance and texture of the affected skin. Milk baths may provide some cosmetic improvement due to their containing lactic acid, a natural alpha hydroxy acid in milk. Sunlight is helpful as well. Coconut oil may also be helpful if applied to afflicted areas while in the shower. Scratching and picking at KP bumps causes them to redden, and, in many cases, will cause bleeding.

This is an excellent question because it is opens the door to a serious medical issue which is the ignoring of seemingly simple symptoms which could be the door to life changing medical conditions.

The first thing that is needed is a good differential diagnosis so that treatment for the correct condition can be initiated.

Although there are similarities between Parkinson's disease and Alzheimer's disease, the primary treatments are not the same because many of the symptoms are not the same. Supplemental treatments can be quite similar depending upon the medications used in the primary treatment.

Although both conditions have both motor and non-motor symptoms, PD has more initial motor symptoms while AD manifests more cognitive symptoms.

It is also important to distinguish between both conditions and normal aging and even more important not to rationalize the symptoms as aging when there are other markers of disease. Anosmia also presents in Lewy Body Dementia, PDD, and Alzheimer's with Leewy Body Dementia as well as several other conditions such as: diabetes, Huntington's disease, malnutrition, brain tumor, MS, medications, certain chemical exposures, Schizophrenia, traumatic brain injury, zinc deficiency.

If anosmia presents as a solitary symptom, it would also be helpful to treat it as such and take a look at zinc levels for example. However, if anosmia presents as being 10% less than normal aging (a 10% increase actually) then it is time to look at AD as a possible cause of the condition. It is also important to note the progression of the anosmia.

The benefit of early treatment in both AD and PD has the goal of slowing the progression of the diseases although that is not always possible.

In PD it would be a combination therapy involving a medication such as Azilect, with nutritional supplements such as CoQ10 and other antioxidants to relieve oxidative stress, vitamin B complex, vitamin D3 (higher dosages are now suggested to maintain the immune system) and several others.

In AD therapies are being developed to clear the plaques and neurofibrillary tangles. Currently doctors use chlorinesterase inhibitors such as Aricept (donezepil hcl) and Excelon (rivastigimine - available as a patch for continuous delivery). Nutritional supplements can be added such as medium chain triglycerides (MCT) combined with coconut oil and Omega 3 oils.

Although smoking appears to defer PD, it is said to increase your chances of developing AD by 79%. And obesity can increase the chances by 3.5X. Chronic stress is an early indicator in both PD and AD. Essentially, there are other conditions which should be controlled well if they are present: diabetes, hypertension, higcholesterolol, heart disease, obesity, sleep disorders (which are actually symptomatic) inactive lifestyle.

A change of diet is felt to be in order. The Mediterranean diet is now recommended. Several small meals throughout the day, green and black teas have been found to be beneficial in PD and would apply to AD as well.

Exercise should be both physical and mental for both AD and PD. Forced Exercise for PD has been shown to help restore some brain homeostasis, reduce reliance on meds and to relieve symptoms in Parkinson's disease. Yoga helps relaxation and breathing.

I don't want to get into the NSAID debate here because of the risk of kidney and liver damage without regular testing but there is evidence that ibuprofen can delay onset of AD. I am adding 2 links below for AD and one for PD. There is no question that reducing the risk levels are highly significant.

But the most important thing is education of the medical staff through continuing education of the early warning signs and the importance of being aware of, open to, to follow-up on these early warning symptoms. The next most important thing is for patients and their families (especially the caregivers) to be proactive. Do not accept, "well, it isn't this, so go home." Always ask, "What's the next step?" If that isn't forthcoming, ask until there is an affirmative action. Just because a suggested treatment is not a prescription, it does not mean that there should not be a follow-up appointment ina few months with re-determinationon made at that time.

One last note: if a diagnosis is made of PD or AD, it is a good time to get your house in order. Better not to need the financial, medical and legal plans than to need them and not be capable of making them.

Any recipe ideas with coconut water?

Do any of you put coconut oil on your dog's food?

I was talking to a friend of mine a few months ago, and they suggested putting coconut oil on my Dobermans food. Do any of you add this to your dog's food? I finally went out and bought some of this yesterday as I've been told it's wonderful to cook with and can even be used on your own skin and hair. Do you use this stuff, and if you do with your dog, how much and how often do you use it? What size dog do you have? Any other tips would be great if you would like to share them. Thank you.

@ Mary.......Thanks for telling me about this. I'm going to call my oldest Son a little later and ask him about this. He is a health FREAK, and I thought he used this stuff, but I could be wrong. I was sort of hoping that *Greek* would see this and chime in, as he is a very health conscience person.
OK.......I just off the phone with my Son and he says I bought the wrong kind, but it's OK to use. He said the KEY words when buying Coconut Oil are: Organic, Expeller Press, Unrefined, and Extra Virgin. Clearly, by the link I provided, I did buy Organic Expeller pressed, but the one I bought was refined and not Extra Virgin.

I'm still hoping that Greek will chime in with his opinion, if not used with dogs, but his opinion for people.

I have a Doberman, and I do use coconut oil for both myself & for my dogs.

I have used it on my skin, though hesitant at first, I have used it. Not trying to sound superficial but...my skin is very soft and clean. I only use plain old organic coconut oil for my skin.

As for my hair, you do a pre-wash treatment, which works better than a post wash...if this is making any sense at all... To add, part of the reason is because coconut oil repels water.... So when applied as a pre-wash conditioner, it prevents the entrance of water into each strand, which would otherwise make it prone to damage and breakage.


As for the dogs? Some like the taste in their food and some won't touch it....as I have firstly experienced with one of my previous dogs. One LOVED the taste, and the other turned her nose to it.

Use only organic virgin coconut oil. "Start slowly with a half teaspoon a day for each 20 pounds of body weight. It's best to divide it and give a little though out the day. Work up to a full teaspoon once or twice a day." I used to give my GSD fish oil pills but for the past few months have not been giving them to her. I have noticed her coat is not as shiny - not a huge change or anything but something I've noticed nonetheless. Anyway, I've been looking into Coconut Oil for dogs. I think it's something we'd like to try however, I'm worried about her having very loose stools from adding this.

My question is regarding the Coconut oil. Has anyone that uses it for their dog experienced problems with loose stools or upset tummies? When I buy it I know it's just going to be a learning experience to see what happens but I didn't know if some sort of reaction to it was usual or not. Is it a good idea to build up to a tablespoon of it a day?

I use it a couple of times per week with both of my dogs. One is a Doberman (70 lbs.) and the other a small Poodle mix/mutt that weighs abouut 15 lbs. I don't actually use any exact measurement, so I just eyeball it. Neither of my dogs have had any loose stools at all from this.

Since this stuff can be a pit pricey, let me give you a little tip. I don't have a Costo membership but my cousin does, so she gets me this......Carrington Farms.....pure, unrefined, cold pressed and 100% organic extra virgin coconut oil. The one I have is a 54 oz tub, which is pretty darn big, and I think it only costed about $15.00 or something close to that.

You could but you would want to use less. Coconut oil can be overpowering, extremely rich, and high in calories. It might change the texture and the way the cake bakes. You might have to cook it for more or less time.

Do a little research on working with coconut oil and see what is said about it. Go to food sites and blogs or type "cooking with coconut oil" or "coconut oil with cake mix".

Great stuff for your skin - hair I don't know. As to eating it, it's OK to use for food. In some cultures food is sauteed in coconut oil but the flavor is fairly distinctive so you may not want that flavor. One thing it is really good for is about 1 tablespoon to a couple of ounces of melted chocolate instead of shortening to make it shine better when using it to coat something. Prevents that sort of dusty look after you have melted chocolate and it rehardens.

For the morning, you could make blueberry breakfast polenta and immune boost juice..

Blueberry Breakfast Polenta

1 cup non-GM cornmeal
½ tsp cinnamon (optional)
½ tsp sea salt
1½ cups fruit juice (apple, pear, or other non-citrus fruit)
1½ cups filtered water
1 tsp non hydrogenated coconut oil, or sunflower or olive oil (plus extra to oil dish)
1 cup blueberries (fresh or frozen, but not thawed)

Mix the cornmeal, cinnamon, salt, and juice in a small bowl.

Bring the water to a boil in a 3-qt/L saucepan. Once boiling, slowly stir in cornmeal mixture.

Cook uncovered on medium-low heat for 20-30 minutes, stirring frequently to prevent scorching, until thick and smooth. It's done when you can jam a spoon into it and it'll stand on its own.

Remove from heat. Stir in the oil using a silicone spatula, then gently fold in the blueberries. Scrape polenta into a lightly oiled or parchment-lined baking dish or pie plate, and smooth out evenly. Allow to set for about 30 minutes (It'll firm up on its own; you'll see).

Cut the polenta however you like—I slice it evenly into quarters and then cut each quarter into 4 triangles.

Store any remaining polenta in an airtight container in the fridge for up to 4-5 days and warm it up in a skillet or toaster oven before serving.

Immune Boost Juice

Makes 1 serving (about 1¾ cups)

3 large or 4 medium carrots
1 small or ½ medium beet
1 medium apple
1 thumb-sized piece fresh ginger root

Optionals (choose 2)
½ lemon, peeled
1 small or medium cucumber
2 stalks celery
4 stalks kale

Scrub all produce well, and trim off ends of carrots and beet—no need to peel anything. Your juicer may have a wide enough mouth for whole apples, but I recommend quartering them and removing the seeds (as they contain small amounts of cyanide). Process all ingredients in juicer according to machine's directions.

Drink immediately (centrifugal juicers produce juice that oxidizes quickly), sipping slowly for maximum nutrient absorption.

Millet-Stuffed Bell Peppers

Makes 6-8 servings

1 tbsp olive oil
2 medium onions, finely chopped
2-3 cloves garlic, minced
2 tbsp tamari soy sauce
2 tsp dried thyme (or 1 tbsp fresh)
1 tsp dried rosemary (or 2 tsp fresh)
½ tsp celery seed
freshly ground black pepper to taste
4 cups cooked millet (may substitute with quinoa or brow rice)
¾ cup tahini
¾ cup ground raw pumpkin or sunflower seeds
up to ¼ cup filtered water or vegetable stock
½ cup minced fresh parsley leaves
6-8 organic medium-large bell peppers

Preheat oven to 375°F (190°C).

Heat the oil in a 3-qt/L saucepan on medium-high. Add the onions and sauté for 8 minutes, until they begin to soften. Add the garlic, tamari, thyme, rosemary, celery seed, and pepper, and sauté for another 5 minutes.

Combine the millet, tahini, and seeds in a large bowl and mix well. Transfer to saucepan and cook until well heated, stirring occasionally; you'll likely want to add a few splashes of water or stock to prevent sticking.

Turn off heat and stir in the parsley. Adjust seasonings to taste (sometimes I add some extra thyme and rosemary).

Slice tops off the bell peppers, remove the core, seeds, and veins, and stuff peppers with millet mixture. Discard or compost bell pepper tops (or enjoy as a raw snack).

Place 1-in (2½-cm) water in a baking pan. Place peppers upright (they must stay upright to keep stuffing from getting soggy) in pan and bake for 25-30 minutes, until peppers are soft.
