Fast, Easy Diet for a picky person.?

Hi :) I'm 15 years old and I'm clearly over weight and it really does suck. I eat pretty healthy but my family just eats out way to much, I do not like fast food's but when you have nothing else to eat your gonna eat it am i right or not? I'm right. Okay well anyways; I've always been over weight and I've always been a picky person. I only really eat chicken; I eat it baked and sometimes I will eat it fried but that is RARE that i do that. I love love love spicy foods so I love hot sauce and stuff in my chicken. I love to eat yogurt and fruit and i only like carrots as a veggie. How can I lose weight by getting a healthier diet when I'm a picky eater.? Can someone please help me, I want serious answers and I don't want anyone to be rude on here because It's just not nice, I know I'm fat? K you don't have to point it out :) Also; I cannot exersice a lot because I was born with heart problems and if I do to much i'll pass out or something bad can happen so if theres any light exersice you can put in there please let me know of that too. Any help would be great and I'd really appriciate it. I can list foods for you that I do like to eat so you can help more. I like chicken, bacon, potatoes, mac and cheese, pork, some steak but rarely any steak at all. I like yogurts of all flavors and I like all fruits except pinapple and I love to eat carrots and lettuce and things that go into salad. I am not a big fan of milk or cheese or really any dairy but yogurt. I do not like pasta's or breads either. I will drink water but it gets to bland for me; any other ideas? I like soda a lot but i can easily quit drinking that it's no problem for me whatsoever. just someone please help me i would seriously enjoy your help and any kind of help you can give is good. I just need to lose weight and I want to do it healthy and not with surgery or medicines. Here are some important tips:

â¢Water (about eight 8oz. cups of water a day, throughout the day, NOT all at once.) This is VERY important to stay healthy. It will also help you lose weight by flushing out toxins.

â¢Apple Cider Vinegar (take 1 tbsp. after every MEAL) [Best if you get organic and in a dark bottle as being exposed to light makes it lose some of it's benefits. I recommend Eden Organic.] The health benefits are awesome and it's great for burning fat.

â¢Grapefruit (1 whole) [Best if it's organic and fresh but at least make sure that there is nothing added] The health benefits are awesome and it's great for burning fat.

â¢Raw Honey (spoonful a day) [Best if it's organic, not the cute little bear. Make sure it is raw, uncooked. And try to get it local as it's better.] The health benefits are awesome and it's great for allergies.

â¢Mineral Water (water with a pinch of celtic salt) Your minerals are important.

â¢Greek Yogurt (I eat about 3-4 scoops per serving) [Get plain and add your own fresh or frozen fruit and sugar (or Stevia)]

â¢Almonds [and other nuts] (eat at least 9 almonds a day) Nuts have many nutritional benefits and help prevent CHD.

â¢Cherry Juice Concentrate (2 tbsp. mixed with 7 oz. water twice a day [morning and night]) [best natural or organic. I recommend balaton tart cherry juice] Helps promote: anti-inflammation, pain relief, mobility and flexibility, joint function, cardiovascular function, anti-aging, immune system, sleep cycle

â¢Extra Virgin Olive Oil (1-2 tbsp. per day) [store in a dark place] The health benefits are awesome and it also helps prevent heart disease.

â¢Vitamin C (at least 1000mg per day) Supports immune system to help you from getting sick and staying healthy.

Remember your trying to BURN FAT, not just lose weight.
You should be eating about five times a day.

This will help to keep your metabolism going. This applies even when you aren't trying to burn fat. Of coarse how many times you eat depends on how long you're up for. You should wait at LEAST 2 hours until you eat again from the time you FINNISHED your last meal. If your hungry before two hours, it's in your head, not your stomach. Don't eat. Unless, you're not eating the right portions, in which case you should adjust your portions so that they'll sustain you. You should be eating enough that your satisfied, not hungry, not full. You should also be drinking about eight 8oz cups of water a day throughout the day, NOT all at once. Use real sugar or Stevia, artificial sweeteners are bad for you body. When you cook with oil, use olive oil or coconut oil. If you eat chocolate, try to get dark chocolate as it is better for you. Exercise at least 20 min. a day straight. Whether it be walking, jogging, running, biking, sports etc. You choose. Try to avoid really fatty foods like pork. Try turkey bacon. Even if you think you won't like any of these things at least try them, it might surprise you. And I spent a lot of time putting this together so it'd be nice to know it was worth while.

Learn a lot of variety in raw foods to not get tired of it. Get some raw food cookbooks.

Also add green smoothies. Victoria Boutenko who wrote many books on green smoothies did a study where people did nothing to change their diet but add one quart of green smoothie a day..at the end of the study 30 days later all participants showed various changes like health improvements & weight loss.

Join some meetup groups for vegans. vegetarians & raw groups to meet friends to learn from & support you in this new way of eating & share recipes with.

My suggestion would be to take flax seed oil daily to treat yourself from the inside out. Your hair needs a constant flow of nutrients via blood to hair follicles. Add a bit of zinc too. I snack on pumpkin seeds for my fatty acids and zinc.

Eat a healthy diet eliminating sugar, caffeine and alcohol since they tend to dry the skin and hair. Eliminate stress from your life.

Use natural shampoos without all the chemicals in them. Trader Joe sells some great ones inexpensively.

Treat your hair with extra virgin olive oil 2 or 3 times a week. Sleep with it overnight.

It won't happen overnight, but, you'll see improvement with time.

Avoid the chemicals sold to promote hair growth. They are very bad for you. Stay away from bleaching, heavy gels or mousses. Avoid styling tools like curlers and hair dryers.

Oil: olive, almond, coconut, any kinds of oil, is another form of conditioning/moisturizing the hair. It doesn't make hair grow, it makes the hair greasy/oily. I don't use them, nor do I use conditioner on my hair.

The incorrect common knowledge that coconut oil is bad for you came about because the coconut oil that was tested was trans-fat laden partially-hydrogenated coconut oil!

Extra virgin (or virgin) coconut oil is *very* healthy for you. It's a good saturated fat that is made up of short and medium chain oils that lower LDL (the bad) cholesterol for one thing. These oils assist in removing fatty plaques from your blood system. Even in 'clean' blood systems several studies have shown that EVCO can reduce blood pressure.

Those same oils are also used by the body to build and repair damage to the nervous system, that's why coconut oil has been used in the formula fed to premature infants for decades. There's evidence that consumption of EVCO does the same thing in adults also.

There's (at least) anecdotal evidence that replacing polyunsaturated oils with EVCO assists in weight loss. It seems that when your body sees a decent amount of short and medium chain saturated fats coming in it decides that there's no reason to store fat (at least that's the (as yet) unproven theory(it's currently being researched)).

As to cooking with it? It makes baked goods moist for one thing, since it's a solid at 70 degrees you can also use it to make flaky pie crust<g>. BTW; it goes fully liquid around 80 degrees (in other words its melting point is similar to butter or ghee (hint hint)).

If you want homemade popcorn that's as good as movie theater popcorn the only way to do it is use coconut oil (they do<g>)!

You CAN fry with coconut oil and it's a great way to get a good crust on food without making it greasy. If you've been frying with olive oil you'll do fine with coconut oil since it has a higher smoke point (approx 320 for EVOO, 360 for EVCO). There's a sneaky trick you can do when frying with EVCO, if you hold it's temperature at around 300 for a few minutes all the aromatics evaporate, then the smoke point raises to well above 400! That same trick also lets you control how much coconut flavor you get when cooking with EVCO, if you start the food frying in cool EVCO you get a hint of coconut in the cooked food, add the food to hot EVCO and no coconut taste.

Because coconut oil is a saturated fat it has a MUCH longer shelf life than polyunsaturated and monounsaturated oils (in other words it takes a long time to go rancid).

If you don't want to worry about coconut flavor you can look for a brand like Spectrum since they sell a refined non-hydrogenated version. Nutiva is the brand of EVCO I usually buy since they do cold fresh processing, that's also why it smells like coconut<g>.

Refined Coconut Oil

Most commercial grade coconut oils are made from copra. Copra is basically the dried kernel (meat) of the coconut. It can be made by: smoke drying, sun drying, or kiln drying , or derivatives or a combination of these three. If standard copra is used as a starting material, the unrefined coconut oil extracted from copra is not suitable for consumption and must be purified, that is refined. This is because the way most copra is dried is not sanitary. The standard end product made from copra is RBD coconut oil. RBD stands for refined, bleached, and deodorized. High heat is used to deodorize the oil, and the oil is typically filtered through (bleaching) clays to remove impurities. Sodium hydroxide is generally used to remove free fatty acids and prolong shelf life. This is the most common way to mass-produce coconut oil. The older way of producing refined coconut oil was through physical/mechanical refining (see Tropical Traditions Expeller Pressed Coconut Oil.). More modern methods also use chemical solvents to extract all the oil from the copra for higher yields.

RBD oil is also sometimes hydrogenated or partially hydrogenated. This happens mostly in tropical climates, since the natural melting point of coconut oil is about 76 degrees F, and already naturally a solid in most colder climates. Since coconut oil is mostly saturated, there is little unsaturated oil left to hydrogenate. Hydrogenated oils contain trans fatty acids.

Virgin Coconut Oil

Virgin Coconut Oil can only be achieved by using fresh coconut meat or what is called non-copra. Chemicals and high heating are not used in further refining, since the natural, pure coconut oil is very stable with a shelf life of several years. There are currently two main processes of manufacturing Virgin Coconut Oil:

1. Quick drying of fresh coconut meat which is then used to press out the oil. Using this method, minimal heat is used to quick dry the coconut meat, and the oil is then pressed out via mechanical means.

2. Wet-milling. With this method the oil is extracted from fresh coconut meat without drying first. "Coconut milk" is expressed first by pressing. The oil is then further separated from the water. Methods which can be used to separate the oil from the water include boiling, fermentation, refrigeration, enzymes and mechanical centrifuge.

The method we use at Mt. Banahaw Health Products Corp. in the Philippines is the traditional fermentation method. The coconut milk expressed from the freshly harvested coconuts is fermented for 24-36 hours. During this time, the water separates from the oil. The oil is then slightly heated (less than boiling temperatures) for a short time (10-15 minutes) to remove moisture, and then filtered. The result is a clear coconut oil that retains the distinct scent and taste of coconuts. This is a traditional method of coconut oil extraction that has been used in the Philippines for hundreds, if not thousands of years. Laboratory tests show that this is a very high quality coconut oil, with the lauric acid content being 50 to 57%. This oil is not mass produced, but made by hand just as it has been done for hundreds of years. Our coconuts are certified organic according to strict USDA standards. In addition, all of our coconuts are hand-picked within 24 hours of harvest. Only those nuts that produce the highest quality coconut oil are chosen, while the rest of the crop is sold to copra dealers. Because of our extremely selective procedure for selecting the coconuts, we pay a higher price to the farmer. Almost all other virgin coconut oils on the market are mass-produced and do not take this kind of attention to detail that begins with choosing the right nuts. Also, the coconuts used to make our Virgin Coconut Oil are grown in very rural areas, generally far away from metropolitan areas. Since coconut trees grow just about everywhere in the Philippines, most coconut oils on the market are harvested from trees in metropolitan areas, because there is less cost to transport them to the place of manufacture. Many of our producers are in areas so remote, that if they did not use their coconuts to produce Virgin Coconut oil for us, no one would buy their coconuts because it would cost too much to transport them to manufacturing plants.

One of the main differences between Virgin Coconut oil and refined coconut oils is the scent and taste. All Virgin Coconut Oils retain the fresh scent and taste of coconuts, whereas the copra-based refined coconut oils have a bland taste due to the refining process. Some grades of refined copra-based oils are also now sold that have a coconut flavor, but are usually bitter and have a burnt taste to it. They are a form of "crude coconut oil" that has not undergone all of the deodorizing process, and they have a shorter shelf-life.

What is "Extra Virgin Coconut Oil?"

Some retailers and manufacturers of Virgin Coconut Oils, referring to one of the processes mentioned above, call their coconut oil "Extra Virgin Coconut Oil." But there are no other processes used to make coconut oil other than the ones mentioned above, so this classification is simply arbitrary. There is no official classification or difference between "virgin" and "extra virgin" as there is in the olive oil industry, since the two oils are completely different in fatty acid composition, harvesting procedures, and terminology.

Virgin Coconut Oil and Heat

There have been many claims made recently on the Internet that there are Virgin Coconut oils in the market that are processed without heat, and that these coconut oils are somehow superior to coconut oils that use some heat in the processing. Do these claims have any merit? Mt. Banahaw Health Products and Tropical Traditions has thoroughly researched this topic, and following are the results.

Some are claiming that there are "raw" Virgin Coconut oils that never see heat at temperatures above a certain temperature (usually slightly over 100 degrees F.) and therefore contain beneficial enzymes. However, unless one is purchasing a coconut oil that has been transported from the tropics in refrigerated containers, and is delivered to you in refrigerated delivery trucks, this is just simply not possible. Mt. Banahaw Healthy Products Corp. was the first company to export "Virgin Coconut Oil" from the Philippines, using the traditional fermentation method as described above. Since those early days, many other producers have now entered into the local market in the Philippines with a variety of different "Virgin Coconut Oils" produced in many different ways. So in 2005 Professor Vermont P. Dia of the University of the Philippines conducted a study with some of his graduate students to analyze various Virgin Coconut Oils produced using different methods. Their results were published in December 2005, in The Philippine Agricultural Scientist, Vol. 88 No. 4, pages 462-475. The title of the article is "Comparative Physiochemical Characteristics of Virgin Coconut Oil." The results of this study have become the standard for Virgin Coconut Oil quality in the Philippines, and were published and implemented by both BFAD (Bureau of Food and Drugs) and PNS (Philippine National Standards).

They produced three batches of Virgin Coconut Oil in their laboratory using three different methods, and also analyzed six different commercial brands of Virgin Coconut Oil in the Philippines. The three batches they produced in their laboratory were all produced with little or no heat, some using refrigeration and never going above 47 degrees Celsius (less than 117 degrees F.) The values that were tested in all these Virgin Coconuts oils were: melting point, gravity, saponification, iodine, free fatty acid (FFA), peroxide value, moisture content, fatty acid composition, tocopherols, and total phenolic content. Their results found that: "while the VCOs produced by the three methods and using different varieties had some differences in chemical and quality properties, these differences may not be large enough to significantly affect the overall quality of the VCO. Further, their levels are still within the CODEX standards for coconut oil." In the 6 commercial brands they tested (where it is routinely assumed today that "no heat" is better), they found some had values that exceeded the limits of standards in areas like moisture content and FFA. The study was concluded by stating: "The effect of higher temperature (>50 C) during processing on the quality of VCO is likewise important to determine and is being investigated."

Mt. Banahaw Health Products Corp.'s Virgin Coconut Oil is not sold in the local Philippine market, as it is produced exclusively for Tropical Traditions, so we decided to send a sample to Professor Dia to analyze. We already knew that our VCO consistently tested well within standards for moisture and FFA (our moisture levels, for example, have ranged from 0.06 to 0.08 percent in 2006, where industry standards for refined coconut oils are .10%), but we had never tested for phenolic acid, an antioxidant usually associated with products like Green Tea and Olive Oil. Some have theorized that it is the polyphenols in Virgin Coconut Oil that differentiate its quality from regular refined coconut oil, where polyphenols are generally missing. The three samples Professor Dia and his students produced in the laboratory, and the six commercial samples they tested had a range of 6.29 to 8.38 mg gallic acid of phenolic content per gram of oil. When they tested the VCO of Mt. Banahaw Health Products Corp., the values were 13.21 to 13.43 mg gallic acid per gram of oil! (See Professor Dia's statement on Mt. Banahaw Health Products VCO here.) We repeated this test several times on different batches of our Virgin Coconut Oil to verify the high results. In some cases, our phenolic content was more than twice as high as other Virgin Coconut Oils they had tested.

So in terms of empirical evidence, there is no evidence anywhere that we can find that Virgin Coconut Oil produced with "no heat" is superior in any way to the traditional method of producing Virgin Coconut Oil that is used for the Tropical Traditions brand of VCO, which has been sold to hundreds of thousands of people in the US market and around the world for six years now. On the contrary, Professor Dia has verified that at least with phenolic content, our VCO tested higher than any other VCO they had tested in the Philippines. While it has not been proven that the small use of heat that the traditional fermentation method uses at the end of its process to remove moisture and impurities is the cause of these high values (we are still testing for that - could it be that without some heat there are some undesirable enzymes from the coconut meat present in the oil that are breaking down some of the beneficial properties of VCO??), it at least shows that if the methods and quality of coconuts that Mt. Banahaw Health Products Corp. producers practice are followed, that the use of heat in the process has no negative affect on the quality of Virgin Coconut Oil produced.

Cooking with coconut oil?

Q. So I have heard of many benefits using coconut oil for cooking but the coconut oil has to be organic, unrefined and either extra virgin or virgin. I really do want switch to using coconut oil for all my cooking but I'm still debating whether to buy it since a good quality organic coconut oil is not cheap for a small bottle. So I want to know how it tastes and will it give a really coconut taste to the food I'm cooking with? Such as vegetables like probably cauliflower or brussels sprouts or spinach with some garlic. And how about pan seared fish? Anyone here ever used it to cook fish like maybe salmon or halibut simply with some sea salt for seasoning?

If you do use coconut oil, do you have a favorite brand? And I've heard some brands taste different from other brands? Is there a coconut oil out there that won't give my cooked food a coconut taste? I do love coconuts but I just don't know if it will taste good with cooked vegetables and fish. How about the refined version? Is it really bad?

If it is a good quality oil you will have some coconut taste. If you are cooking something like an egg, it will have a slight taste. Refined is different. I once used the cheaper refined brand they sell at walmart(lou anne ??), it gave no coconut taste. It also had no smell. A good quality coconut oil will have a coconut smell. I cook the things you listed above in the oven, so I really don't use oil for that. I tend to use coconut oil in place of butter in baked goods. I also like to use it for a body scrub. I get my oil from mountain rose herbs online. It is a company I have been buying from since about 05. I love everything they sell. They have wonderful cooking oils and herbs/spices.

Soy milk question for my 13-month old....?

I'm new to this, I've never had soy milk until I found out my son is lactose intolerant! Is it better to buy the unsweetened soy milk or the plain soy milk?
Hey Doc Fill, you are incorrect. If 12+ month olds are lactose intolerant, they need to get their milk from soy milk and/or cheese and other dairy sources. My cousin is my pediatrician and gave her kids soy milk from 12 months on.

Plain soy milk is fine, but babies do not need any milk/dairy substitutes. It makes life a whole lot easier for you to ensure she's getting a balanced diet, but she can have a balanced diet with out any milk/dairy substitutes.

You can do some research about the key fortification of milk and then find other sources to get the same thing. Four of the big things we drink milk for are vitamin A, vitamin D, calcium, and fat.

I love to exercise but I love to eat as well. I am getting married the begining of April and just had a baby 9 months ago, I cannot seem to lose weight I started going to the gym in August and lost a lot of inches but gained 15 lbs then with the stress of school and a new baby gained it all back plus some. It really depends on the melting point range.

1. Many organic substances melt below 100C so water is ideal, and not hazardous, doesn't catch fire etc

2. Clear thick paraffin oil is also good and doesn't decolourize on heating. As it can be taken to around 250C it is ideal.

3. For the third choice I'd say why not use a modern electrical melting point apparatus. The liquids are fine, but very old fashioned these days. I used to use these for all my student lab sessions as a teacher... and I retired nearly 10 years ago! So embrace modern technology!

Organic coconut oil is best. You should be able to get it from health food store. Usually found in solid form but will melt when warmed up. Can use it in a number of ways ie. in cooking, with shakes, or on your breakfast cereal. Can be applied to skin but haven't heard it being applied to hair. think it would make it too greasy. More value as a food but then health and beauty come from within and if you eat crap then you will look like crap.

Try it because i have a lot of clients swear by it. I have used as well and found it to be good. But in sayin that we are all different and respond differently to different supplemenmts.

Yes coconut oil is good for people and dogs. It is saturated fat, but it is nice and it is good for both people and animals. Coconut oils is natural. It has no additives. It is simply oil made out of coconut. It is made by grating the coconut, squeezing the milk out, then put it to set and then fry the crean that settles on top. It is nothing more than coconut.

Coconut oil can be used for cooking as well as can be drank in small amount for medicine with a little salt and lime added to it. It can also be used for other medicine like for cough and cut or injuries by adding campher to it.

I've used coconut oil for all these things and it works very well. I've used it on dogs, cats and birds as medicines and in their foods.

@ Mary.......Thanks for telling me about this. I'm going to call my oldest Son a little later and ask him about this. He is a health FREAK, and I thought he used this stuff, but I could be wrong. OK.......I just off the phone with my Son and he says I bought the wrong kind, but it's OK to use. He said the KEY words when buying Coconut Oil are: Organic, Expeller Press, Unrefined, and Extra Virgin. Clearly, by the link I provided, I did buy Organic Expeller pressed, but the one I bought was refined and not Extra Virgin.

I'm still hoping that Greek will chime in with his opinion, if not used with dogs, but his opinion for people.

I have a Doberman, and I do use coconut oil for both myself & for my dogs.

I have used it on my skin, though hesitant at first, I have used it. Not trying to sound superficial but...my skin is very soft and clean. I only use plain old organic coconut oil for my skin.

As for my hair, you do a pre-wash treatment, which works better than a post wash...if this is making any sense at all... To add, part of the reason is because coconut oil repels water.... So when applied as a pre-wash conditioner, it prevents the entrance of water into each strand, which would otherwise make it prone to damage and breakage.


As for the dogs? Some like the taste in their food and some won't touch it....as I have firstly experienced with one of my previous dogs. One LOVED the taste, and the other turned her nose to it.

Can I make bread with eggs, instead of yeast? We don't have any yeast, and it's real late so I want to make a loaf with eggs. We also have, flour, sugar, brown sugar, butter, milk, olive oil, coconut and rosemary oil, and basil. Can I combine these ingredents to make recipes?

Not a traditional loaf of bread. It just wont work. But sweet breads such as bannan, zucchini, apple, etc... (any dried fruit works well) require eggs not yeast.

Pina Colada Zucchini Bread

4 c. flour
3 c. sugar
2 tsp. b. powder
1 tsp. b. soda
4 eggs
1 c. canola or safflower oil
1 c. greek yogurt
1 tsp. each coconut , rum and vanilla extracts
3 c. shredded zucchini
1 c. crushed pineapple
1/2 c. chopped nuts ( optional )
Line the bottoms of 3 greased and floured 8x4 " loaf pans with wax paper and grease the paper ; set aside.
In lg. bowl , combine flour , sugar , b. soda and b. powder . In another bowl , combine the eggs , oil , yogurt and extracts . Stir into the dry ingredients until moistened . Fold in the zucchini , pineapple and walnuts . Transfer to the prepared pans . Bake at 350 degrees F. for 50 - 55 min. or until tester comes out clean . Cool for 10 min. before removing from pans .

2 c. flour
1 c. wheat germ
3 tsp. b. powder
2 tsp. cinnamon
1 tsp. pumpkin pie spice
salt
1/2 c. oil
3/4 c. greek style yogurt
4 eggs

Mix dry ingredients together ; set aside . Put eggs in lg. bowl and beat lightly . Add oil , sugar , honey and mix well ; then add rest and mix well . Add dry ingredients to egg mix and stir together until moist . Fill muffin tins 2/3 to 3/4 full . Bake at 350 degrees F. for 20 - 25 min. or until tester is clean .

Vegan Oatmeal Raisin Muffins

Dry Ingredients:
â¢1 and 1/2 cups Whole Wheat Pastry Flour
â¢1/2 cup Oats (Quick Cooking)
â¢1/4 cup Ground Flax seed
â¢1/4 cup White Sugar
â¢1 teaspoon Baking Powder
â¢1 teaspoon Baking Soda
â¢1/2 teaspoon Cinnamon, ground
â¢1/2 teaspoon Salt
Wet Ingredients:
â¢1 and 1/4 cups Almond Milk
â¢1 tablespoon Vinegar (I used apple cider vinegar)
â¢1/4 cup Oil ( I used organic, refined melted Coconut Oil)
â¢1/4 cup Maple Syrup
Optional Ingredients:
â¢1/2 cup Raisins
â¢1/2 cup Walnuts, chopped
Procedure:
1.Preheat oven to 350F/180C for 15 minutes. Lightly grease or line a 12 cup muffin tin with paper liners. Mix the almond milk and vinegar together and set aside for 5 minutes, for the mixture to curdle. Mix about a tablespoon of flour with the raisins, so that the raisins will not sink to the bottom of the muffins.
2.In a large bowl, combine all the dry ingredients.
3.In a small bowl, whisk together the curdled almond milk, maple syrup and coconut oil. Stir into flour mixture until just combined. Fold in the raisins and nuts.
4.Fill each muffin cup about 3/4ths full. The batter was just enough for 10 muffins and not for 12 muffins mentioned in the original recipe. So I filled the remaining empty 2 muffin cups with some water, to ensure even baking of all the muffins.
5.Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Mine were ready in 16 minutes. Remove the pan from the oven and cool it on a wire rack for 5-10 minutes. If you use paper liners, remove the muffins out of the pan just after 5 minutes to prevent condensation.

KERALA LAMB IN COCONUT MILK - VERY HOT

ngredients
1 1/2lb tender lamb.
30-fl ozs coconut milk. (1 1/2pts)
12 green chillies.
1 lemon.
1 tablespoon ghee.
1 tablespoon butter.
1 tablespoon flour.
Salt to taste.
8ozs very small potatoes.
2 inch piece root ginger.
1 sprig curry leaves.
6 cloves.
6 green cardamoms
1 stick cinnamon.
4 large onions.


Method

Dissolve the coconut cream into 1 ½ pints hot water and stir until dissolved.
Slice the onion finely. Heat the ghee in a large saucepan and fry the sliced onion, cloves, cardamom and cinnamon until brown.
Stir in ½ of the coconut milk mixture and bring to the boil over a medium heat. Cut the meat into 1-½ inch pieces. Add the meat to the boiling coconut milk. Stir in salt to taste, cover the saucepan and let the contents simmer on a low heat.
Boil the potatoes and peel them. Split the chillies lengthways. Divide the remaining onions into 4 pieces each. Grate the ginger finely.
When the meat is almost tender add the quartered onions, chillies and ginger and continue cooking until tender. Add the boiled potatoes.
Mix the flour into the remaining coconut milk and add this mixture to the curry.
As soon as the gravy thickens, remove from the heat.
Stir in the butter, juice of lemon and curry leaves. Mix gently and serve hot with breads, dhall, pilaff rice and plenty of chilled elephant beer!!!!

Put oil in a pressure cooker and set over medium-high heat. When oil is
hot, put in curry leaves, cinnamon, cardamom, cloves, and peppercorns.
Stir once and put in onion. Saute for 1 1/2 minutes or until onion is
soft, and put in meat, potatoes, carrots, turmeric, coriander, cayenne,
green chilies, salt and 1 cup of the stirred coconut milk. cover
securely with lid and on high heat bring up to full pressure. Turn the
heat to low and cook for 15 minutes. Lower pressure with cool water
poured on lid and remove lid. Cook uncovered over high heat for 5-6
minutes, stirring gently as you do this. Add remaining coconut milk and
bring to simmer. Turn off heat.

Omega 3 to 6 ratio- how do I achieve it and get enough of them too?

Q. The recommended amount of Omega 6 to consume a day is about 17 grams, which is easily done by eating some sunflower seeds, most oils, etc. Yet, they also recommend we try to balance our Omega 3 and 6 intakes, so that we consume an equal amount of each, or at the most a 4:1 ratio of Omega 6 to Omega 3 (different sources recommend different ratios).

So where does this 'eat fish twice a week' advice figure in that? By my reckoning, if I want to meet my 17 gram Omega 6 recommendation, and also get a 1:1 ratio, that means I need to eat about 1.5 kilos of fish every day to get the 17 grams of Omega 3!

Even if I aim for a 4:1 O6 to O3 ratio, I'd still need to eat a tin of tuna and a tin of salmon EVERY DAY to meet achieve that ratio.

Hoping someone can explain this... Thanks for reading :)
EDIT: I have a pretty strict diet, so I can keep the Omega 6 amount at virtually 0 if needed, I'm just not sure at what level to put them both (I can't afford to buy a fishing boat at the moment).

Both very good answers so far. Wondering what you guys think of bioavailability of Omega 3 from plant sources? ie I read only 5% gets converted to EPA and DHA, so once again you're looking at huge quantities of flax oil required to make enough useable Omega 3?

You don't need 17 g of Omega-6, that's way more than you need. I guess there are sources that recommend that, but in my opinion that's total BS. And as you point out, it's very difficult to get anywhere near that much Omega-3. Furthermore, most sources of Omega-3 also provide Omega-6, but even more of it.

A lot of people say they aim for a 1:1 ratio but that's difficult even if you supplement with a high-quality O-3 fish oil. It's hard to get Omega-3, and it's hard NOT to get Omega 6. You do not need to attempt to make sure you get enough Omega-6 .... it's damn near unavoidable that you get plenty.

So really the name of the game is to deliberately get Omega-3, while minimizing your exposure to Omega-6 (again, you'll still get plenty).

O-3 sources: salmon, sardines, supplements, egg yolks of certain eggs (look for O-3 content on the label and try to get the richest source), grass fed meats, and wild game if you can get it.

How to minimize Omega-6: use nuts and oils with the most benign Omega-6 profile: Macadamia nuts and oil, olive oil, coconut oil. Careful with other types of nuts. AVOID polyunsaturated seed oils, soybean oil, and margarine. A specifically "high-oleic" sunflower oil is OK. Attempt to eat grass-fed meat rather than grain-fed meat as much as possible. Don't eat anything fried in a restaurant. Even ALL of these things still do have Omega-6, just not so much.

Remember: Omega-3 originates in green grasses and algea, eaten and accumulated by fish and grass-fed animals. Omega-6 originates in other plants (seeds, nuts, grains, soybeans), and accumulates in animals that feed on those foods.

*** Yes, my understanding is the same as yours about plant O-3. I used to eat chia seeds before I realized it was all ALA that had to be converted very inefficiently to EPA and DHA. So I just don't consider flax and chia a worthwhile source of Omega 3 at all.

Most oils come from the seeds of plants, which are crushed and pressed to remove the oil. Heat can damage oils and alter the fatty acids, creating harmful substances, so the best oils are produced with minimal heat. This is called cold pressing. However, when you see the term "cold-pressed" on a label, don't assume that the oil in the bottle was not heated during manufacturing. "Cold-pressed" is a little fib that appeals to consumers who are savvy enough to equate heating with damage to oils. The problem is that the term has no chemical, legal, or technological definition, and it means something different to a manufacturer than it does to the consumer. To a manufacturer, cold-pressed simply means that no external heat was applied during the pressing of the oil, yet the press itself, which comes in contact with the oil, may become quite hot anyway and damage the oil. A more informative label would state the temperature at which the oil was processed, which ideally should be below 110 degrees. The words "omegaflow process" on a label means that the oil has been protected from reaching high temperatures during processing.

Most of the oils you'll find in the supermarket have not only been extracted with heat or solvents, but have also been refined with potentially toxic substances. These processes improve shelf life and make oil cheap to produce, but they take the product further away from its natural state and leave chemical residues behind. If the label does not boast that the oil is "unrefined," you can assume that it has been through some kind of chemical process that makes it worse for your health.
