What are some healthy recipes to make?

Nothing with meat because I'm a vegetarian but I'm not vegan. I want a healthy dessert or an easy meatless meal to make at home. I like cookies and cakes and cupcakes. They don't have to have fruit in them to make them healthy. If you know a good recipe for dessert or something sweet, then please tell me what it is and it doesn't have to be healthy. I want a yummy healthy recipe not one that is healthy but tastes bad :P Thanks!!! Oh and please attach recipes :))) <33 you guys!

Here is a delicious, easy, healthy dessert recipe. The blog it came from has tons more.

One Minute Chocolate Cake

Ingredients
1 tablespoon plus 2 tsp cocoa powder
3 tablespoons spelt flour (or white, or Arrowhead Mills gf)
1/8 tsp salt
2 tsp sugar or evaporated cane juice (edit: xylitol works as well)
1/4 tsp baking powder
1 stevia packet (or 1 tablespoon more sugar)
2-3 tsp coconut oil or vegetable oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I canât personally vouch for the results if you make that substitution.)
3 tablespoons milk of choice (I used almond milk)
1/2 tsp pure vanilla extract

Mug cake recipe: Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Microwave 30-40 seconds. If you donât want to eat it straight out of the dish, be sure to spray your dish first (and then wait for it to cool before trying to remove it).

Nutritional Info:
Calories: 205 with oil (or 140 without)
Fat: 12g with oil (or 2g without)
Carbs: 30g
Fiber: 6.5g
Protein: 5.5g

This can be served with ice cream but that will add calories.

And here is a meatless meal!
Kitchen Sink Quesadillas

Ingredients
1 15.5-ounce can black beans, drained
1 11-ounce can corn kernels, drained
3/4 cup salsa, drained
1 8-count package large flour tortillas
1 1/2 cups (6 ounces) shredded Cheddar or Monterey Jack
1 small red onion, thinly sliced
1/3 cup fresh cilantro leaves
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
juice of 1 to 2 limes
2 tablespoons extra-virgin olive oil
1 head romaine lettuce, sliced 1 inch thick

Directions
Heat oven to 400° F. In a medium bowl, combine the beans, corn, and salsa. Place 4 tortillas on a parchment- or foil-lined baking sheet.
Sprinkle the tortillas with half the cheese. Using a slotted spoon, top with the bean mixture. Sprinkle with the remaining cheese; top with the remaining tortillas.
Bake the quesadillas until the cheese has melted, 5 to 7 minutes. Transfer to a cutting board.
Meanwhile, in a large bowl, combine the onion, cilantro, salt, pepper, lime juice, and oil. Add the lettuce and toss.
Cut each quesadilla into 6 wedges and serve with the salad.

Does anyone have a brownie recipe that is sugar free and uses stevia, and is also dairy free?

So vegan, sugar free but not gluten free. I have stevia and prefer to use that, although some recipes add applesauce and that would be fine. Any ideas? Thanks...

â¾loosely-packed 3 cups kale or spinach leaves (80g)
â¾1/2 cup applesauce (120g)
â¾2 1/2 tsp pure vanilla extract
â¾1 1/2 cups water (360g)
â¾3 tbsp ground flax (18g)
â¾3/4 cup vegetable or melted coconut oil (115g)
â¾1 cup coconut flour (135g) (Coconut-free recipes are linked at the very bottom of this post.)
â¾3/4 cup cacao or cocoa powder (65g)
â¾1/2 tsp salt
â¾1/2 tsp baking soda
â¾3/4 cup xylitol or sugar of choice (150g)
â¾1/16 tsp pure stevia, or 2 extra tbsp sugar of choice
â¾1/2 cup mini chocolate chips, optional

Preheat oven to 350F. Line a 9Ã13 pan with parchment paper, or grease well. Blend together the first 6 ingredients (if using coconut oil, make sure applesauce and water are not cold).

In a large mixing bowl, stir together all remaining ingredients. Pour wet into dry and stir until just evenly combined, pour into the prepared pan, then use a full sheet of parchment or wax paper to press down firmly until the batter evenly covers the pan. Bake 19-20 minutes. Pat down hard with a pancake spatula or another sheet of parchment paper. Let brownies sit 15 minutes before cutting into squares. (As a general rule, cutting brownies with a plastic knife prevents crumbling.) They taste 10 times better the next day, so make them in advance if possible. Makes 20-24 squares. (Frosting recipe is below the next photos.)

*For applesauce, substitute date paste. I use my Ninja blender to grind dates into a ball that sticks together, you can mix some water into that to get a paste, and use that for applesauce. It's sweeter than applesauce.

*Water, use your milk of choice.

*I used white whole wheat flour, and they still turned out fine.

*OPTIONAL use nut butter in place of the oil. I used peanut butter, but you should also get good results from cashew or coconut.

*Blend your dates in a food processor, and use THAT instead of the sugar/xylitol.

*Funny, the blogger from whom I procured the recipe usually states that the chocolate chips are NOT optional, so I'll hold her to that, add them anyways.

I posted this for another user on here. No stevia, but I thought it tasted good anyways. I suppose you could add a few drops, or a dash of stevia to heighten the sweetness.
