Answer
Here are some healthy snack ideas :)
Try to go for natural organic foods when possible.

~ Veggies & hummus - such as raw carrot sticks, cucumber, cherry tomatoes sliced, lightly steamed broccoli, slices of bell pepper, celery sticks, steamed kale, etc. If you want you could dip whole wheat pita in hummus.

~ Veggies

~ Fruit

~ Fruit salad

~ Apple slices with nut butter (such as organic peanut butter or almond butter)

~ Nuts, seeds or trail mix

~ Homemade trail mix (made with things like raw nuts - almonds, walnuts, pecans, cashews, etc., seeds, gogi berries, dried fruit such as dates, dried cranberries, dried blueberries, dried apricots, dried cherries, dried apple, raisins, coconut, dark chocolate chips...)

~ Whole grain crackers with hummus

~ Rye crispbreads (topped with things like nut butter, organic jam, hummus, slices of tomato, avocado, salsa, etc.)

~ Homemade sweet potato chips (made by thinly slicing sweet potatoes, glazing with extra virgin first cold pressed olive oil, sprinkling with herbs)

~ Healthy cereal (Nature's Path Organic, Barbara's, Kashi) - high fiber

~ Kind fruit & nut bar, Lara bar, Nature's Path Organic snack bar

~ Dates with 1/4 cup raw almonds

~ Berries with raw nuts (such as almonds, walnuts, pecans, etc.)

~ Kale chips (made with extra virgin first cold pressed olive oil)

~ Buckwheat or spelt pancakes or waffles

~ Hard boiled eggs

~ Greek yogurt, regular yogurt or goat's milk yogurt

~ Greek yogurt with berries

~ Coconut milk yogurt, soy yogurt or almond yogurt

~ Parfaits made with greek yogurt or non-dairy yogurt, berries, organic granola or muesli (such as Nature's Path Organic granola or blueberry almond muesli, raspberry hazelnut muesli)

I hope this helps :)

Going on a Road Trip and on a Plant Based Diet?

CLC0930

Recently began eating plant-based (basically Vegan w/out added oils/fats) and would like some lunch and snack ideas for a 13+ hour car ride. Preferably foods that boost energy and are easy to eat in a car and will keep in a cooler.

Thanks!!

Answer
homemade kale chips, carrot sticks, applesauce, apple slices, sliced bell peppers (yellow are best), sliced mini cucumbers, celery sticks, broccoli, homemade air-popped popcorn (with agave if you like it sweet). Or just mix up a salad with whatever veggies you like, and have that.

Fruit smoothies are great too. Use some frozen fruit (strawberries and peaches are always good), a bit of coconut water, and 100% fruit juice like orange juice. You can even add some kale or spinach or carrot juice if you like. Mixing carrot juice and orange juice together also makes for a sweet treat.
