Answer
i have a *delicious* muffin/cake recipe that uses zucchini, carrots, and any other veggies you want to put in. hang on, i'll get it for you. =)
1 cup rice flour
1 cup rice bran
2 cups sugar (I think Kim uses cane sugar)
1/2 tsp salt
2 tsp baking powder
2 tsp cinnamon
1 tsp xantham gum*
4 eggs
1 cup oil (or oil and flax seed combo; Kim recommends 1/2 cup grapeseed oil and 1/2 cup coconut oil)
2 cups grated zucchini, carrot, squash or combination
1.5 cups apple sauce or crushed pineapple in juice
1 cup ground walnuts (optional)
Mix all ingredients (it helps to add dry ingredients and nuts last).
Bake in muffin tins for 30 minutes at 350 degrees.
*Xantham gum will bind everything together. This is important if you're using the rice flour and rice bran. If you use wheat flour (or, for example, 1 cup of whole wheat flour and 1 cup of rice flour) you won't need the xantham gum. At least this is my (Karen's) experience. Xantham gum is available in the baking section at whole foods or native sun.

Eating 6 small meals a day to lose weight?
Shannon!
What constitutes a small meal exactly? Fruits? Vegies?
And is vegetable oil a safe alternative than that solid, white grease? (this is what my mom cooks with because she refuses to pay all that money for olive oil. And at the store we go to, a 12 oz bottle can run up to $18)
Answer
A small meal can be any of these things:
1. Fruits (Raspberries, strawberries, blueberries, apples, pears, mangoes, tomatoes, etc.)
2. Veggies (Lettuce, zucchini, asparagus, broccoli, etc.)
3. Fruit Smoothie made at home with healthy ingredients or from Jamba Juice
4. A healthy drink (Pineapple juice, Tomato juice, water, milk, etc.)
5. Organic meat (you're favorites, cooked at home)
6. Eggs (Fried, scrambled or in a healthy eggnog)
7. Whole wheat bread and healthy whole grain cereal
Please skip eating out and try to eat at home as often as you can.
If your mom is only willing to cook with lard, beg her to buy olive oil or coconut oil to cook with. Vegetable oil is NOT healthy, it is indeed quite unhealthy, so skip that. Even offer to pitch in and help pay the price! Try Trader Joe's and Wild Oats for good prices and healthy alternatives.
Good luck!
