I know they are pro-meat lobbyists, but they staunchly support coconut oil against soybean and corn oil, saying that people who culturally consume large quantities of coconut oil in South and South East Asia have very low rates of heart disease. Is there any truth in their claims?

Did Mercola and Western price mention that in thier report ?
They would need to have a baseline group to measure against, they cannot just quote a whole part of the globe and atribute thier health to just one product.
Maybe they have less heart desease because they don't sit in a car and commute for 2 hours every day. Who knows.
All commercially sponsored research is self-serving, probably best to ignore it. If its really important to you, best go with independent academic or charity research.
I was involved ( peripherally ) in research into the effects of mobile phone emmissions. The report concluded all was well in the industry and there wer no immission issues. Guess who paid for it...Yep, Nokia. The research came out last year attributed to an "independent body". They are all trying to manipulate us.
Don't know why i said all that, guess I'm saying we should all make our own views and pay little attention to research. If your diet is wide ranging and full of natural foods, you'll be fine.

ways to eat a coconut?

well i bought a coconut on a whim the other day because i wanted to open it. i opened it and separated the inside from the shell and ran around the block with the two halves of shell quoting Monty python. but i have no clue what to do with the flesh. its good plain but i feel like making something. any suggestions?

German chocolate cake. Coconut shrimp. Or try this: buy some plantains (looks like little bananas). Peel and half them the long way. Coat them with a little oil and roll them in shredded coconut, and then fry them. Delicious snack I learned about while dating my ex, who was Puerto Rican and a gourmet chef.
But don't discount good old plain coconut. I grew up in Florida with cooconut-bearing trees in our yard, and I loved eating the raw flake as a kid while my parents mixed rum with the milk inside.
