Any good coconut milk recipes?

I recently bought some coconut milk because i thought well why not try it, but then when i tried it on its own it was too strong for me ! does anyone have any good smoothie recipes or anything they think would be good with the coconut milky flavor ? or ever any food recipes that contain coconut milk ? :) thanks!

Ginger Coconut Milk Soup
I posted a picture of my lunch the other day, and a few of you requested specifics - it was a spring soup made with a ginger & shallot coconut milk broth, spring vegetables, served over egg noodles.

Yellow Bean Salad

My family and I don't have a very exotic taste so no crazy dishes pleases!!
they have to take an hour or less. and they have to be low fat and healthy!!! thank you!

Some Ideas:
Chicken/ Beef Stir frys (non spicy)
Lasanga.
Spaghetti Bolognese.
Chicken burgers (not fried)
Chicken fajitas (with breaded chicken?)
Healthy Pizza.
Curry. (not to hot)

and any other nice recipes you may know of!?!?

Thai Chicken
Ingredients
1 tablespoon olive oil
1 medium onion, thinly sliced
1 3/4 teaspoons Thai green or red curry paste*
1 14-ounce can unsweetened coconut milk* whisked to blend
1 tablespoon (packed) brown sugar
2 teaspoons fish sauce (such as nam pla or nuoc nam)*
1 pound skinless boneless chicken breast halves, cut into thin strips
1 large red bell pepper, cut into strips
2 tablespoons fresh lime juice plus wedges for garnish

Preparation
Bring 1/4 cup coconut milk and curry paste to boil in large skillet over medium-high heat, whisking constantly. Add bell pepper and onion; sauté’ 5 minutes. Stir in chicken, remaining coconut milk, sugar and fish sauce. Cook until chicken is cooked through, stirring often, about 5 minutes. Stir in remaining 3 ingredients and simmer 1 minute. Season to taste with salt and pepper.
