I use coconut oil in many things in place of oils or butter..However, you really need to know what you are doing.. Coconut oil becomes liquid or solid at a different temp then most oils. If you do not know what you are doing, it can become little solid lumps. I have never done it in pie crust, and it would be a great alternative. I would suggest trying it out with a very small amount of ingredients and seeing if it has that affect when mixing it with those products on those products.

would you just sub it cup for cup? or would you need to modify?

Sure but be sure to allow the finished crust dough to chill thoroughly.
I would chop some shredded coconut finer than it is in food processor or with knife on chopping board and add this to the flour when blending in the oil. Wow! I think that will be great. Thanks for tripping my mind on recipes.
Off to the kitchen now to make some fantastic crust for Coconut Cream pie for my hubby!
