Please ask around among your friends for the absolute *best* snack recipe that uses almond flour instead of regular wheat flour and contains very little sugar. I am trying to put together a "paleo" diet cheating cookbook with recipies.

Well I won't ask my friend because most likely they won't know and I am lazy too :P However I did the googling and found some paleo diet recipes. The second link I show you, their pumpkin bread uses almond flour, I will copy and paste for you from the website :-)

Pumpkin Bread
-------------
1 cup almond flour*
1/4 cup coconut flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons pumpkin pie spice
1/2 teaspoon high-quality cinnamon
4 large eggs
1/2 cup coconut oil, melted
1/2 cup pumpkin puree
2 tablespoons maple syrup or honey
1/8 cup pumpkin seeds
Preheat oven to 350 F.
In a medium bowl, mix the almond and coconut flours together, along with
the baking powder, salt, pumpkin pie spice, and cinnamon. Set the dry
mixture aside.
In a mixer bowl, cream the eggs and the coconut oil together until smooth,
then add the pumpkin, maple syrup, and stevia. Mix the wet ingredients
until thoroughly combined.
Slowly add the dry ingredients. Mix until combined.
Oil a small loaf pan with coconut oil and then our batter into pan.
Sprinkle the pumpkin seeds on top.
Bake at 350 for 35-50 minutes. Check the loaf with a toothpick at 30
minutes. If it doesn't come out clean, continue baking.
Remove from oven and let cool for about an hour before removing from the
pan.
Let the loaf cool completely before cutting. Use a lightly serrated knife
to cut.
*You can grind your own almond flour by placing whole almonds in a blender/
food processor and blending until a meal consistency is reached.

Any good paleo cookie recipes?

Whenever I bake paleo cookies with almond flour, they don't tend to stay together. Am i doing something wrong or is this just how almond flour does?

I bake paleo as well. I actually have the same Paleo(ish) choco chip cookie recipe as GHL posted above. It's great. The only problem I have with it is that it's hard to spoon onto the baking sheet. It sticks to your hands A LOT.
But, I found that adding a little coconut oil to either your hands or to the batter actually makes the dough stick less and you'll have an easier time rolling it up into a ball.
Also, a tip: if you wind up using a cookie recipe (or any other paleo sweets recipe) that calls for arrowroot, use tapioca instead. I find that arrowroot gives the dessert a little more of a "dinner spice" flavor than I like, personally.
